Ingredients

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1 cup milk
  • 1 egg (or 1 tbsp flaxseed + 3 tbsp water)
  • 1 tbsp butter or oil
  • Pinch of salt

Steps

  1. Whisk dry ingredients in a bowl.
  2. Add milk and egg; mix until just combined (lumpy is okay).
  3. Heat a lightly oiled pan on medium; pour 1/4 cup batter.
  4. Cook until bubbles form, flip and cook 1 minute.
  5. Serve warm with honey or syrup.

Tip: Do not overmix; that keeps pancakes fluffy.
